While there are many reasons why Mylar bags are best for long-term food storage, these reasons would make you fall for them.
The thing that makes these bags different from other food storage bags is that they are a powerful barrier to oxygen, light, and moisture. It blocks all these from reaching the food and thus prevents it from spoiling.
An oxygen-rich environment destroys the food via oxidation, facilitating the growth of mold and aerobic bacteria. This changes the color, smell, texture, and flavor of the food, thus leaving the food not to be used ever in the future.
Moisture and light also kill the food by allowing the aerobic, anaerobic bacteria, and molds to grow.
Mylar bags are highly efficient in protecting food from bacteria and molds. These bags are usually 3-7mils in thickness (or between), thus protecting the food from oxidizing via light, oxygen, and moisture. Its thick foil laminate layer has a lower Oxygen Transmission Rate, and thus the food is protected for longer terms.
Note: While storing the food in Mylar bags to prevent it from oxidizing, ensure that the food contains less than 10% moisture when packed oxygen-free. Also, ensure that the food you are planning to store in these bags is lower in fat, as it will go rancid even if the environment is oxygen-free.
Lightweight and Flexible
These bags are incredibly light in weight and conform to the shape of foods you store in them. Thus, the bags are easy to carry, and the food gets stored easily without leaving any free space for any gas to enter.
